This dish features chicken tenders marinated in a zesty mixture of lemon zest, lemon juice, olive oil, thyme, and garlic. It's quick to prepare and cook, making it a perfect option for a flavorful meal in no time.

Ingredients
- 1 tablespoon minced lemon zest
- ¼ cup fresh lemon juice
- 2 tablespoons olive oil
- 6 sprigs fresh thyme, leaves stripped and chopped
- 1 clove garlic, minced
- 1 pound chicken breast tenders
- salt, to taste
- ground black pepper, to taste
- 1 tablespoon butter
Directions
- Mix the marinade: Combine the lemon zest, lemon juice, olive oil, thyme, and garlic in a large bowl.
- Marinate the chicken: Season the chicken tenders with salt and black pepper; add them to the lemon mixture, toss to coat, and set aside to marinate for about 5 minutes.
- Heat the pan: Place your nonstick skillet over medium-high heat with a tiny splash of olive oil and let it get hot for about 1 to 2 minutes. (The oil protects the nonstick coating and shimmers when ready).
- Meltdown: Add 1 tablespoon of butter. Let the butter melt completely and start to foam.
- Add the chicken: As soon as the foam begins to subside (but before the butter turns brown), remove the chicken tenders from the marinade, shake off the excess, and add them immediately to the skillet.
- Cook and flip: Cook until lightly browned and cooked through, about 3 to 4 minutes per side. Start checking the internal temperature around the 3-minute mark on the second side. It is ready when it reads at least 165°F
