Chicken Thigh & Vegetable Stir-Fry

Tender chicken thighs are combined with fresh vegetables and a savory sauce, making it a perfect weeknight meal that’s both satisfying and nutritious.
Chicken Thigh & Vegetable Stir-Fry

Ingredients
1½ lbs boneless, skinless chicken thighs, cut into bite-sized chunks
1 bunch broccolini, cut into 2-inch pieces
2–3 heads bok choy, chopped
1 medium onion, sliced
1½ cups pea pods
1 small can bamboo shoots, drained
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
⅓ cup coconut aminos
1 tablespoon fish sauce
1 teaspoon honey
1 tablespoon arrowroot flour
½ teaspoon salt, plus more to taste
2 tablespoons sesame or avocado oil, divided
Green onion, sliced, for topping
Sesame seeds, optional, for topping
Directions
Make the sauce. In a small bowl, whisk together the coconut aminos, fish sauce, honey, grated ginger and arrowroot flour.
Cook the chicken. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken thighs and sprinkle with the salt. Cook for about 5–7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken to a plate.
Stir-fry the vegetables. Add the remaining tablespoon of oil to the pan. Add the onion and broccolini and stir-fry for 2–3 minutes. Add the bok choy, pea pods, and bamboo shoots. Continue cooking for another 3–4 minutes, stirring frequently, until the vegetables are crisp-tender.
Add the garlic. Add the minced garlic and cook for about 30 seconds, just until fragrant.
Bring everything together. Return the chicken to the pan and pour in the sauce. Toss everything together and cook for 2–3 minutes, allowing the sauce to coat the chicken and vegetables and reduce slightly.
Taste and finish. Taste and add a little more salt or coconut aminos if needed. Sprinkle generously with sliced green onion and, if desired, sesame seeds.
