Ingredients
- 1 lb Grilled 100% Grassfed Ribeye Steak
- 1 lb asparagus, trimmed and blanched
- 1 cup roasted corn kernels
- 2 cups fresh spinach leaves
- 1/4 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
- Fresh herbs (such as basil or parsley) for garnish
- 1 lb Roasted mini gold potatoes
Directions
In a large salad bowl, combine fresh spinach, potatoes, blanched asparagus, roasted corn, cherry tomatoes, min-potatoes and red onion.
- Gently toss the salad together with balsamic vinaigrette, ensuring all ingredients are well-coated.
- Arrange the sliced grilled steak on top of the salad.
Optional - Sprinkle crumbled feta cheese and fresh herbs over the top.
- Season with salt and pepper to taste before serving.
