Here's a hearty dish that whips up in no time and can be eaten hot out of the oven (serve right in the pan) or straight from the fridge with a nice side salad. Start with our All-Natural Mild Turkey Sausage or our Sweet Italian Turkey Sausage from our friends at Stonewood Farm in Vermont which will do most of the work for you in terms of flavor.

Did you know you can freeze frittatas after they're cooked? We like to make pie slices, separate them with parchment, place them in a zip-top bag so you can take one or two out when you're ready to eat. A quick few minutes in the air-fryer or 10 minutes in the oven at 325° and they'll be ready to enjoy.

Turkey Sausage Frittata

Ingredients

  • 2 tbsp olive oil, butter or ghee

  • 1 lb Heartstone Farm turkey sausage (mild or sweet Italian style)

  • ½ onion, finely diced

  • 8 eggs

  • ½ cup full fat milk or cream

  • ¾ cup grated cheddar cheese, divided

  • 2 tbsp fresh parsley, chopped

  • handful of cherry tomatoes sliced thin

  • ½ tsp salt

  • freshly ground pepper

Directions

  1. Preheat your oven to 350°

  2. Add eggs, milk, half your grated cheese, parsley, salt and pepper to a large bowl. Whisk together.

  3. Stir in cherry tomatoes

  4. Add your butter or oil to a large cast iron or oven-save pan. Heat on medium until slightly sizzling.

  5. Add onion and sauté until translucent

  6. Add ground turkey to the pan and break up with a wooden spoon into small pieces

  7. Turn the heat down to low and add your egg mixture to the pan

  8. Sprinkle your remaining cheese on top and move the pan to the broiler

  9. Bake for 20-25 minutes or until top is firm (a little jiggle is okay) and slightly browned on top

  10. Slice and serve warm or refrigerate and serve at room temperature at a later time. Great with a fresh tossed salad alongside.
