Sweet and Spicy Chicken Wings

Wing fans can be a tough crowd. Some prefer sweet. Some prefer spicy. Well these wings are perfect for both camps. The balance of the sweet orange juice and honey with the spice and tanginess of Sriarcha, makes these, as they say, finger-licking good.

If you haven't tried Sriracha, you are in for a treat. Sriracha is made from red jalapeño peppers, vinegar, garlic, salt and a little vinegar. It has quickly become America's favorite condiment in the last few years. Did you know that in 40 states, people prefer it to ketchup? That's how good it is. While it has a nice kick, it's fairly subtle so the heat level is palatable for just about anyone. And it's a perfect companion to our all-natural, humanely raised chicken wings.

A tip for getting a nice even crispiness on these wings (and easy clean-up): place the wings on a rack over a tin-foil lined cookie sheet so air circulates around them and the foil catches the sticky juices that may drip down.

Sweet and Spicy Chicken Wings

Ingredients

  • 2 lbs chicken wings

  • 1 tsp salt

  • ½ tsp freshly ground black pepper

  • juice of 1 orange

  • ¼ cup Sriracha + extra to serve on the side

  • 1 tbsp honey

  • 2 tbsp soy sauce

  • 2 spring onions (scallion), thinly sliced (½ for sauce, ½ for garnish)

  • 1 tbsp fresh ginger, peeled and finely grated

Directions

  1. Preheat the oven to 400°F

  2. Season the wings with salt and freshly ground black pepper. Bake in the oven for around 35 minutes, turning halfway through (internal temp should be 165°)

  3. Next, mix together the orange juice, Sriracha, honey and soy sauce and stir in the ginger and ½ of the chopped scallions

  4. Remove the chicken wings from the oven and brush generously with the sauce. Bake for an additional 5 minutes then remove from the oven, cool briefly and serve

  5. Garnish with the other ½ of the chopped scallions and serve some extra Sriracha on the side
