Sausage and Kale Stew

Cook up a big pot of pasture-raised Sausage and Kale Stew today and you'll have dinner ready in no time as well as some leftovers you can keep in the fridge or freezer for another day. Not only is this stew delicious and satisfying but it's chock full of nutrition and delivers 26 grams of protein per serving as well as vitamins A, B6, C, K, folate, fiber, carotenoids and manganese. Now that's a super stew!
Our sausages are hand-made with the highest quality pasture-raised meat. You can opt for pork or sausage and go mild or go spicy and add a nice kick. Or mix it up. No rules here.

Our pasture-raised sausages bring so much flavor to this stew. We have both sweet and spicy sausages. Pork or chicken. Whichever you prefer.

Ingredients
2 tbsp extra virgin olive oil
1 medium onion, peeled and diced
2 cloves garlic, peeled and minced
1 lb yukon gold potatoes, peeled and diced
12 oz Heartstone Farm pasture-raised sausage (pork - Sweet or Zesty Italian, chicken - Sweet or Spicy Italian)
6 cups low-sodium vegetable stock
1/2 lb fresh kale, washed and chopped
1 cup flat-leaf parsley, washed and chopped
1 tsp freshly ground pepper
1/2 tsp salt or more to taste
Directions
Heat the oil in a large Dutch oven set over medium heat until hot. Add the onion, garlic, and a pinch of salt, sweating for 3-4 minutes until softened
Add the sausage and potato, stir, and cook for 3-4 minutes. Pour in the stock, stir well, and increase heat until boiling
Once boiling, reduce the heat to a simmer and cook for 20 minutes or until the potato is tender
Once the potato is tender, stir in the kale and continue to cook for another 5 minutes until softened. Stir in the parsley and adjust the seasoning to taste
Ladle into bowls and serve immediately
