Turkey Meatloaf with Toasted Pine Nuts, Raisins & Tomato-Dijon Glaze

Here's a meatloaf recipe that can be served at family meals or fancy dinners. Start with our ground turkey breast or our unique ground turkey (a mix of white and dark meat). Mix in warm spices, apple sauce, toasted pine nuts, and raisins and top with a tomato-dijon-vinegar glaze that adds another layer of flavor and makes for a pretty presentation. Slice your meatloaf and serve with mashed potatoes and your favorite vegetables or make incredible sandwiches on crusty bread with a little extra glaze spooned over the meatloaf.

TIP: To easily remove your whole meatloaf from the pan, cut a strip of parchment paper long enough to be able to grab each end when you're ready to lift it out of the pan. Once you oil your pan, place the parchment strip in the pan, press it against the edges then spoon your meatloaf mixture into the pan. When you take the meatloaf out of the oven, carefully lift it out of the pan by holding the two ends of the parchment paper.

Turkey Meatloaf with Toasted Pine Nuts, Raisins & Tomato-Dijon Glaze

Ingredients

  • olive oil to oil the baking pan lightly

  • 1 lb Heartstone Farm ground turkey

  • 1 medium onion, finely chopped
  • 1/2 cup applesauce
  • 1/2 cup bread crumbs (traditional or gluten-free)
  • 1 egg, lightly beaten
  • 3 tbsp raisins

  • 3 tbsp pine nuts, lightly toasted in a pan on the stove

  • 1 tsp smoked paprika
  • 1/4 tsp ground cinnamon
  • pinch of ground nutmeg
  • pinch of ground allspice
  • 1 tsp fresh thyme, chopped + extra for garnish

  • 1/2 tsp salt
  • freshly ground pepper to taste

  • 1 cup ground peeled canned tomatoes

  • 2 tbsp brown sugar

  • 2 tbsp distilled white vinegar

  • 1 tbsp Dijon mustard

Directions

  1. Preheat oven to 375°

  1. In a saucepan, combine the crushed tomatoes, brown sugar, vinegar, and Dijon mustard. Heat the mixture over medium heat and simmer until it thickens slightly (about 5 minutes). Set it aside to cool

  1. In a bowl, combine the ground turkey, onion, apple sauce, bread crumbs, egg, raisins, pine nuts, fresh thyme and dried spices

  2. Place the mixture into your oiled pan and smooth it out so it will cook evenly

  3. Spoon glaze over the top

  4. Bake for 45 - 50 minutes or until the juices are bubbling and internal temp of meatloaf is 160 degrees

  5. Garnish with fresh thyme
