Hearty Beef Stew with Port and Pearl Onions

One of our favorite ways to cook Heartstone Farm's grass fed stew beef is in this hearty dish. The port wine pairs so well with the nuanced flavor of our beef and tenderizes it in the braising process. And the pearl onions add a sweet contrast to the richness of the stew. If you don't have port on hand, you can use another fortified wine like Madeira, Marsala or sherry. But be sure to choose a quality wine you would happily sip.

You can also make this recipe in a pressure cooker. Follow steps 1 and 2 then set your pressure cooker to 35 minutes and allow natural release for 10 minutes then carefully turn the pressure cooker to venting.  


Recommend serving with boiled fingerling potatoes or rice and a nice crusty loaf of bread.


Hearty Beef Stew with Port and Pearl Onions

Ingredients

  • 1 tsp coarse sea salt

  • 1/2 tsp freshly ground black pepper

  • 1/3 cup all-purpose flour
  • 2 lbs Heartstone Farm’s boneless stew beef, cut into chunks

  • 2 tbsp olive oil

  • 1-1/2 cups pearl onions, peeled

  • 1 clove garlic, peeled and finely chopped

  • 2 bay leaves
  • 1 tbsp ground cinnamon

  • 1 tbsp Worcestershire sauce

  • 1/2 cup red wine
  • 1-1/2 cups reduced sodium beef broth

Directions

  1. Mix together the salt, pepper, and flour in a resealable plastic storage bag, and add the beef. Shake to thoroughly coat the beef

  2. Heat oil in a large skillet over medium-high heat and add beef when shimmering. Brown the beef on all sides, for approximately 5 minutes. Do this in batches, if necessary, to avoid overcrowding the pan and steaming the meat

  3. Place the browned beef in the slow cooker with all of the remaining ingredients. Cover and cook for 1 hour on high

  4. Reduce to low and continue to cook for 6 hours or until meat and onions are tender

  5. 5. Remove bay leaves and serve
