Q: What makes filet mignon different from other cuts of beef?

Filet mignon is cut from the tenderloin muscle of the cow, which is a lean and tender cut of meat. It is considered one of the most luxurious cuts of beef because of its delicate flavor and melt-in-your-mouth texture.

Q: How should I cook filet mignon?

Filet mignon is best cooked using dry-heat methods such as grilling, broiling, or pan-searing. It is important not to overcook it, as it can quickly become dry and tough. For a medium-rare filet mignon, cook it for about 3-4 minutes on each side over high heat. Use a meat thermometer and remove from heat when the temperature indicates 125-130 degrees.

Q: Is filet mignon a healthy choice?

Yes, filet mignon is a healthy choice because it is a lean cut of beef that is high in protein and low in fat. Grass-fed filet mignon is even healthier, as it contains more omega-3 fatty acids and other nutrients that are beneficial for heart health.

Q: Why is filet mignon expensive?

An average cow produces only around 4-6 pounds of filet mignon, which accounts for only a small percentage of its total weight. This is because the tenderloin muscle where the filet mignon comes from is relatively small compared to other muscles in the cow. As a result, filet mignon is considered a premium cut of beef and is more expensive than other cuts.

Q: How much Filet Mignon should I order?

As a general rule of thumb, you should plan on serving one steak of 6-8 ounces of filet mignon per person.

Cooking Tips

  • Let the filet mignon sit at room temperature for about 30 minutes before cooking to ensure even cooking.
  • Season the steak with salt and pepper before cooking.
  • Use a heavy-bottomed skillet or grill pan for even searing.
  • Sear the steak over high heat for 3-4 minutes on each side for a medium-rare (125-130°) doneness.
  • Use a meat thermometer to check the internal temperature of the steak, which should be around 125-130°F for medium-rare.
  • Let the steak rest for a few minutes before slicing to allow the juices to redistribute.

What do we mean by 100% Grass Fed?

Our beef is 100% grass fed and grass finished. That means our cattle only eat grass. No corn, no grain, no animal by products -just grass.

In the growing season, they feed on the pastures of our 500 acre farm. In the winter, they eat the hay (grass) we harvested from our fields in the summer.

Beware of supermarket beef labeled "grass fed." Most factory-farmed, supermarket beef is fed grain (mainly corn) in the last few months before slaughter (even when it’s labeled “grass-fed”). While grain will fatten cattle up quickly, it can also make them sick because grains are not their natural feed.

That's why knowing the farmer who raised your meat is so important.

When we say 100% grass fed we mean 100%.

A Note From Farmer Dan

We take pride in raising grass-fed cattle that produce the most tender and flavorful filet mignon. I think of Filet Mignon as similar to lobster - richly flavorful and a joy to eat (without the mess and work of lobster!).
